Chef Sheldon began his culinary journey at Langham Hotel in 1997 after mastering his formal training in London. It was the start of a learning path that has taken him to all parts of Europe, and later to the far East. Among the highlights of his career, Chef Fonseca’s dedication and talent was recognized by many world Class Chefs, as Gordon Ramsay, Angela Harnett, and Wolfgang Puck.
Chef Sheldon took the initiative to open Murano with Angela Hartnett, the restaurant was such a great success, it won it’s first Michelin Star just 4 months after it’s opening in January 2009. Serving modern, seasonal food with an Italian accent, Murano is one of the few restaurants to hold 4 AA rosettes was rated in the top 10 restaurants of UK and remains still today to be London’s favorite Italian spot.
In 2012, Chef Sheldon won the attention of the National Board at the British Culinary Federation that followed his appointment as Executive Chef at the Kempinski Hotel Le Mirador for its five restaurants and food and beverage operation. he was recognized with his first Michelin Star at the restaurant Le Trianon in 2013~2014.
As a new challenge, Chef Sheldon Fonseca is always wanted to work in Asia and joined Gaia Restaurant Group Management in March 2017, as the Executive Chef of the contemporary Italian Restaurant, Joia Ristorante. Joia was awarded ‘Ospitality Italiana’ from the Italian chamber of commerce for authentic Italian food.
In May 2018 was Approached by True fame Ventures for the pre opening Executive Chef for Restaurant La Petite Maison Hong Kong being inspired by his love for the fresh, radiant simple flavors. His cooking vision and innovation are based the traditions and simplicity with a lot of technique. Chef is goal is to create restaurants where people can come at any time and eat extremely well. Since September 2019 Chef Sheldon is in Chengdu, China working as a Consultant for a pre-opening project as Executive chef and beverage Director. Since May 2020 Culinary Director for Miramar group Hotel serviced apartment s and Restaurants.
