Prickly pear is the fruit of the Cactus, although it looks intimidating, but once you get past its spiny outsides, it yields a mild and nutrient-rich flesh. This fruit is delicious and mostly known as a key ingredient for Sorbet but can be added to salads as well
Our special salad consists of our fine products and its very simple to prepare
Lets start!
Ingredients:
- 3 Prickly pears
- 30g Rocket leaves (arugula)
- 2 Small cucumbers
- 2 Branches of mint
- 1 Small red chili (optional)
- 40g or 1/3 cup of olive oil
- Half lemon juice
- 1 Tablespoon Pomegranate molasses
- 1/4 Teaspoon salt
- 1/2 Teaspoon Black pepper
Instructions:
First of all, we will take care of the prickly pears, it is recommended to work with gloves in order to not get harmed from the micro thorns on the skin of the pear.
First wash the pears with running water for about 30 seconds, then cut it vertically and peel the fruit out of it skin, in order to make sure that the fruit is clear of thorns put the peeled pears into a water bowl for couple of minutes so the thorns will sink, remove the pears wash it briefly and cut it to 2cm cubes.
Chop the cucumber to cubes similar size to the pears cubes and mix it with the pears, add the rocket leaves and separate the mint leaves from the branches and add them to the mixture, chop the chili pepper into small pieces and add to the mixture as well.
On a separate bowl mix the olive oil with the lemon juice and pomegranate molasses and add to the mixture of the salad, add the salt and the pepper, mix thoroughly and enjoy!
Caution!
Due to the amount of seeds inside the prickly pear's fruit, it is not recommended for children to consume it raw!
