Weekly Recipe : Rhubarb Strawberry Chia Pudding

With only 5 main ingredients this simple sweet recipe is an ideal healthy breakfast with a high nutritional value. The sweetness of the rhubarb and strawberry cooked with rosewater and mixed with the chia seeds pudding creates a unique sweetness and texture.

Ingredients:

  • 1 Cup (around 250ml) of full fat coconut milk
  • 3 Tablespoons of Chia seeds
  • 125g Of rhubarb sliced into 5cm slices
  • 125g Of strawberries cut into quarters
  • 1.5 Tablespoons of water
  • 2 Tablespoons of rosewater

Instructions:

Day before add the Chia seeds and the coconut milk into a bowl and stir for 2 minutes, let it rest for 10 minutes and stir again for 2 minutes once the seeds begin to gel. Cover the bowl and place it into a refrigerator overnight.

Add the sliced strawberries and rhubarb with the rosewater and water into a frying pan, bring to a boil and simmer for about 15 minutes on a medium-low heat until the fruits has softened, remove and let it cool.

divide the compote into 4 3 glasses and add the Chia pudding seeds and enjoy!
